Easy spicy high protein Chickpea Salad

Are you bored of eating chickpeas in the same old desi way? Then follow us through this super easy spicy Chickpeas salad, which can be made in just a few minutes. Loaded with the goodness of protein and fiber, this easy chickpeas salad makes for a perfect healthy treat for beginners.

Ingredients:

2 cups chickpeas, 1 cup cucumber1 cup cherry tomatoes, 1/2 cup red bell pepper, 1/4 cup red onion,1/4 cup fresh parsley, 1/4 cup feta cheese, 1/4 cup cooked quinoa, 3 tbsp olive oil, 2 tbsp lemon juice, 1 tbsp tahini, 1 clove garlic, minced1 tsp ground cumin, salt and pepper to taste.

Step 1

To begin with this easy recipe, wash, chop and rinse veggies.

In a large bowl, wash and soak the chickpea and pressure cook them for 2-3 whistles.

Once done the water can be drained. Meanwhile, take another large bowl and combine the chickpeas, cucumber, cherry tomatoes, red bell pepper, red onion, parsley, and quinoa.

Now, in a small bowl, whisk together olive oil, lemon juice, tahini, minced garlic, cumin, salt, and pepper until smooth. Adjust the seasoning as needed.

Step 5

Pour the dressing over the salad and toss well to coat everything evenly.

If using, sprinkle feta cheese on top for extra protein and flavor.

Let the salad chill in the fridge for at least 30 minutes to let the flavors meld. Serve cold or at room temperature.
